Cozy One-Pan Pumpkin Spice Chicken with Sweet Apples

Ingredients
  

4 boneless, skinless chicken breasts

1 medium onion, thinly sliced

2 medium apples, cored and cut into slices (preferably Honeycrisp or Granny Smith)

1 cup pumpkin puree

1/4 cup chicken broth

3 tbsp maple syrup

1 tbsp pumpkin spice seasoning

2 cloves garlic, finely chopped

2 tbsp olive oil

Salt and pepper to taste

Fresh sage leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large, oven-proof skillet, heat the olive oil over medium-high heat.

      Sprinkle the chicken breasts with salt, pepper, and half of the pumpkin spice seasoning. Once the oil is hot, place the chicken in the skillet and brown for about 4-5 minutes on each side until they are golden. Remove the chicken from the skillet and set aside.

        In the same skillet, add the sliced onion and sauté for 2-3 minutes until translucent. Then, incorporate the minced garlic and cook for an additional minute until aromatic.

          Toss the sliced apples into the skillet and let them cook for about 2 minutes, stirring occasionally.

            In a separate medium bowl, combine the pumpkin puree, chicken broth, maple syrup, and the remaining pumpkin spice seasoning. Mix until well blended.

              Return the chicken to the skillet, then pour the pumpkin mixture over the chicken and apples, ensuring everything is coated evenly.

                Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (74°C).

                  When finished, take the skillet out of the oven and allow it to rest for a few minutes. If desired, garnish with fresh sage leaves before serving.
