Ingredients

2 tablespoons olive oil

1 pound (about 450g) boneless, skinless chicken breasts, diced into bite-sized pieces

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups low-sodium chicken broth

1 cup heavy cream

12 ounces (about 340g) uncooked penne pasta

1 cup broccoli florets (fresh or frozen)

1 cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, chopped, for garnish (optional)

Instructions

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.

Cook the Chicken: Add the diced chicken pieces to the pot. Season generously with salt, pepper, onion powder, and Italian seasoning. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the pot using a slotted spoon and set it aside.

Sauté Garlic: In the same pot, add the minced garlic. Sauté for about 1 minute, stirring constantly, until the garlic is fragrant and lightly golden but not burnt.

Make the Sauce: Pour in the low-sodium chicken broth and heavy cream. Stir well to combine the ingredients and bring the mixture to a gentle simmer.

Add Pasta: Add the uncooked penne pasta to the pot, stirring to ensure the pasta is fully submerged in the sauce. Cover the pot and cook on medium heat for approximately 10 minutes, stirring occasionally, until the pasta is al dente.

Add Broccoli: After 10 minutes of cooking the pasta, add the broccoli florets to the pot. Stir everything together and cover again, allowing it to cook for an additional 3-5 minutes until the broccoli is vibrant and tender.

Combine and Finish: Return the cooked chicken to the pot. Stir in the grated Parmesan cheese and lemon juice, mixing everything thoroughly. Let it simmer for another 2 minutes, allowing the cheese to melt into a luscious creamy sauce. Taste and adjust the seasoning with additional salt and pepper, if desired.

Serve: Spoon the creamy pasta mixture into bowls. Garnish with freshly chopped parsley for a pop of color and added flavor. Enjoy your delicious, comforting one-pot meal!
