2 cups of diced pumpkin (peeled and seeds discarded)

2 medium apples, cored and diced (recommended choices: Honeycrisp or Granny Smith)

1 medium onion, chopped

2 cloves of garlic, minced

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp cayenne pepper (optional, for added heat)

3 tbsp olive oil

Salt and pepper, to your preference

1/4 cup fresh parsley, chopped (for garnish)

4 large eggs (optional, for topping)

Instructions
 

In a large skillet, warm the olive oil over medium heat. Once it’s shimmering, add the chopped onions and sauté for about 3-4 minutes, or until they turn translucent.

    Incorporate the minced garlic into the skillet and cook for another 1-2 minutes, stirring often to avoid burning.

      Mix in the diced pumpkin along with the ground cinnamon, nutmeg, ginger, cayenne (if using), and a pinch of salt and pepper. Cook for roughly 10 minutes, stirring occasionally, until the pumpkin starts to soften.

        Introduce the diced apples to the skillet and continue cooking for an additional 5-7 minutes, until the apples become tender but maintain some structure. Adjust the seasoning with more salt and pepper if needed.

          If you wish to include eggs, make four small wells in the hash using a spoon. Crack an egg into each well, cover the skillet with a lid, and cook until the eggs are done to your liking, about 5-8 minutes.

            After everything is cooked and well combined, take it off the heat, sprinkle with fresh parsley, and serve while warm.
