9-12 lasagna noodles

2 cups cooked chicken, shredded (using rotisserie chicken is convenient)

2 cups ricotta cheese

1 ½ cups grated mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 cup fresh or thawed and well-drained spinach

3 cups Alfredo sauce (store-bought or homemade)

Fresh parsley, chopped for garnish

Salt and pepper, to taste

Preheat Your Oven: Set your oven to preheat at 375°F (190°C).

    Cook the Noodles: In a large pot, bring salted water to a vigorous boil. Add the lasagna noodles and cook according to the package directions until they reach an al dente texture. Once cooked, drain the noodles and spread them out in a single layer on parchment paper to prevent them from sticking together.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of the mozzarella cheese, ½ cup of Parmesan cheese, garlic powder, onion powder, Italian seasoning, spinach, salt, and pepper. Gently mix all ingredients together until thoroughly combined.

        Assemble the Rollups: On each lasagna noodle, spread a generous spoonful of Alfredo sauce, ensuring even coverage. Then, place a generous amount of the chicken and cheese filling along the wider end of the noodle. Carefully roll the noodle away from you, starting at the wide end, and secure with a toothpick if necessary. Repeat this process until all noodles are filled.

          Arrange in Baking Dish: Pour a thin layer of Alfredo sauce into the bottom of a 9x13-inch baking dish. Carefully place each rollup seam-side down in the dish. Once all the rollups are positioned, pour the remaining Alfredo sauce over the top. Finish by sprinkling the remaining mozzarella and Parmesan cheese over the sauce.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After this, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.
