Ingredients

1 pound chicken breast tenders

1 cup panko breadcrumbs

1 cup finely grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon freshly ground black pepper

1/2 teaspoon salt

2 large eggs

2 tablespoons Dijon mustard

Cooking spray or a drizzle of olive oil

Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil to prevent sticking.

      Prepare the Coating:

In a large mixing bowl, combine the panko breadcrumbs, finely grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt. Use a fork to mix everything thoroughly until evenly combined.

          Prepare the Egg Wash:

In a separate bowl, whisk together the eggs and Dijon mustard until smooth and well blended, ensuring there are no lumps.

              Coat the Chicken:

Take each chicken tender and first dip it into the egg wash, making sure it is fully coated. Allow any excess egg wash to drip off. Next, transfer the chicken tender to the breadcrumb mixture, pressing gently to adhere the coating on all sides. Repeat this process for all chicken tenders.

                  Arrange on Baking Sheet:

Place the coated chicken tenders in a single layer on the prepared baking sheet. For an extra crunchy finish, lightly spray the tops with cooking spray or drizzle a little olive oil over them.

                      Bake:

Bake the chicken tenders in the preheated oven for 15-20 minutes, until they turn golden brown and are cooked through (the internal temperature should reach 165°F / 74°C). To ensure even browning, flip the tenders halfway through the cooking time.

                          Serve:

Once cooked, remove the chicken tenders from the oven and allow them to cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauces such as ranch dressing, honey mustard, or marinara sauce.
