1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 packet (1 oz) ranch seasoning mix

2 cups baby potatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium red onion, sliced

2 tablespoons olive oil

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

      Combine Vegetables: In a separate bowl, add the halved baby potatoes, corn, diced red and green bell peppers, and the sliced red onion. Drizzle with olive oil and season with salt and pepper. Toss the ingredients together to ensure they are evenly coated with oil and seasoning.

        Assemble the Packs: Take a piece of foil and lay it flat. Divide the vegetable mixture evenly among the four pieces of foil, placing it in the center.
