Ingredients

Dry Ingredients:

1 cup rolled oats

1 cup almond flour

1/2 cup raw almonds, chopped

1/4 cup ground flaxseed

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

Wet Ingredients:

1/3 cup honey, or maple syrup for a vegan option

1/3 cup almond butter

1 teaspoon pure vanilla extract

1/2 cup unsweetened applesauce

Fruits:

1 cup fresh or frozen blueberries (do not thaw if using frozen)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch square baking pan by lining it with parchment paper, allowing some overhang for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, thoroughly combine the rolled oats, almond flour, chopped raw almonds, ground flaxseed, baking powder, salt, and cinnamon. Stir well to ensure all ingredients are evenly distributed.

Combine Wet Ingredients: In a separate bowl, whisk together the honey or maple syrup, almond butter, vanilla extract, and unsweetened applesauce. Mix until the ingredients form a smooth, cohesive mixture.

Blend Wet and Dry Ingredients: Pour the wet ingredient mixture into the dry ingredients. Stir until everything is well combined. Carefully fold in the blueberries, taking care not to mash them.

Transfer to Baking Pan: Pour the combined mixture into your prepared baking pan. Use a spatula to evenly spread the mixture and press down firmly to create a dense layer.

Bake: Place the pan in the preheated oven and bake for approximately 25-30 minutes. The bars should turn golden brown at the edges and a toothpick inserted in the center should come out clean.

Cool and Cut: Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out and place them on a wire rack to cool completely. After cooling, cut into squares or bars for serving.

Store: Keep your blueberry almond breakfast bars stored in an airtight container at room temperature for up to a week. For increased freshness, refrigerate them.
