Blueberry & Shrimp Salad Bowl

Ingredients
  

1 pound large shrimp, peeled and deveined

2 cups fresh spinach leaves

1 cup mixed salad greens

1 cup fresh blueberries

1/2 avocado, sliced

1/4 cup red onion, thinly sliced

1/4 cup crumbled feta cheese

1/4 cup walnuts, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Juice of 1 lemon

Prepare the Shrimp: In a large skillet over medium heat, pour in 1 tablespoon of olive oil. Season the shrimp with salt, pepper, and the juice from half of the lemon, coating them evenly. Once the oil is hot and shimmering, add the shrimp to the skillet. Cook for approximately 2-3 minutes on each side, or until the shrimp turn a lovely pink color and become opaque. Remove from heat and transfer the shrimp to a plate to cool slightly.
