1 tablespoon baking powder

1/2 cup unsalted butter, cold and cut into small cubes

1 cup sharp cheddar cheese, finely shredded

1/4 cup fresh chives, finely chopped

3/4 cup buttermilk

1 large egg (for egg wash)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While the oven heats, prepare your baking sheet by lining it with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper until they are fully incorporated and no lumps remain.

      Cut in the Butter: Take the cold, cubed butter and add it to the flour mixture. Using a pastry cutter or your fingertips, gently work the butter into the dry ingredients until the mixture resembles coarse crumbs with small pea-sized pieces.

        Incorporate Cheese and Chives: Add in the shredded sharp cheddar cheese and finely chopped chives, stirring thoroughly to ensure that they are evenly distributed throughout the flour mixture.

          Mix in Buttermilk: Create a well in the center of the dry ingredients and pour the buttermilk into this well. Use a fork to gently mix the ingredients together. Stir until just combined; avoid overmixing—the dough should be slightly sticky.

            Shape the Biscuits: Turn the biscuit dough onto a lightly floured surface. With clean hands, gently pat the dough into a rectangle about 1-inch thick. Using a round biscuit cutter, cut out biscuits by pressing straight down without twisting the cutter.

              Arrange on Baking Sheet: Carefully place the cut biscuits on the prepared baking sheet, ensuring there’s about an inch of space between each to allow for rising.
