1 lb (450g) ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup uncooked white rice

2 cups beef broth

1 can (15 oz) diced tomatoes with green chilies

1 cup frozen corn

1 cup black beans, drained and rinsed

2 cups shredded cheddar cheese

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

Salt and pepper, to taste

2 tbsp olive oil

Chopped fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will ensure it's at the right temperature when your casserole is ready to bake.

    Cook the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant. Next, add the ground beef to the skillet, breaking it apart with a spatula. Cook for approximately 5-7 minutes until the beef is browned and fully cooked. If there’s excess grease, drain it off to keep the dish from becoming too oily.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture with the uncooked rice, beef broth, diced tomatoes (including the juice), frozen corn, black beans, smoked paprika, onion powder, garlic powder, as well as salt and pepper to taste. Stir well until all ingredients are thoroughly mixed and evenly coated.

        Transfer to Casserole Dish: Grease a 9x13-inch casserole dish with cooking spray or a small amount of olive oil. Pour the beef and rice mixture into the dish, spreading it out evenly to form an even layer.

          Add Cheese: Take 1 cup of the shredded cheddar cheese and sprinkle it evenly over the surface of the casserole, creating a cheesy topping that will melt beautifully during baking.

            Bake: Cover the casserole dish tightly with aluminum foil to trap in moisture. Place it in the preheated oven and bake for 35 minutes.
