½ cup sour cream

¼ cup milk

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

    Bake the Potatoes: Thoroughly scrub the russet potatoes to remove any dirt. Carefully prick each potato multiple times with a fork to allow steam to escape. Coat the potatoes with olive oil and season generously with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they feel tender when pierced with a fork.

      Prepare the Filling: While the potatoes are baking, prepare the filling in a large mixing bowl. Combine the steamed broccoli, shredded chicken, and most of the shredded cheddar cheese—reserve a small amount for topping later. Add the softened cream cheese, sour cream, milk, garlic powder, onion powder, and season with salt and pepper. Mix all the ingredients thoroughly until well blended.
