2 medium russet potatoes, peeled and diced into 1-inch cubes

1/4 cup sour cream

1/2 cup milk (plus more as needed for desired consistency)

1 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh chives (for garnish)

Optional: 2 tablespoons crispy bacon bits for a topping

Instructions
 

Cook the Vegetables: In a large pot, combine the cauliflower florets and diced potatoes. Add enough water to cover the vegetables and bring to a boil over medium-high heat. Once boiling, add a generous pinch of salt. Cook the vegetables for about 15-20 minutes, or until they are fork-tender. Drain thoroughly and return the pot to the stovetop.

    Mash Together: In the same pot, add the drained cauliflower and potatoes along with the minced garlic. Using a potato masher or a handheld mixer, mash the mixture until it reaches a smooth, creamy texture.

      Add the Cheese and Cream: To the mashed mixture, incorporate the shredded sharp cheddar cheese, softened cream cheese, sour cream, and milk. Stir well until all ingredients are fully combined and the mixture is creamy. Adjust the amount of milk to your desired consistency. Season with onion powder, garlic powder, and salt and pepper to taste.
