Ingredients

2 cups frozen sweet corn, thawed

1/2 cup mayonnaise

1/2 cup sour cream

1 cup crumbled cotija cheese (or substitute with feta cheese)

1 cup shredded Monterey Jack cheese

1 jalapeño pepper, seeded and finely diced

2 tablespoons fresh lime juice

2 cloves garlic, minced

1/2 teaspoon chili powder

1/4 teaspoon smoked paprika

1/4 cup fresh cilantro, chopped (for garnish, optional)

Salt and black pepper, to taste

Tortilla chips, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures the dip will bake evenly and become perfectly bubbly.

Combine Base Ingredients: In a large mixing bowl, add the thawed sweet corn, mayonnaise, and sour cream. Use a large spatula to stir the mixture until all ingredients are well incorporated and creamy.

Add the Cheese: Gently fold the crumbled cotija cheese and shredded Monterey Jack cheese into the corn mixture. Be careful not to over-mix; you want to maintain some texture in the dip.

Incorporate Extras: To the cheese mixture, add the finely diced jalapeño, fresh lime juice, minced garlic, chili powder, smoked paprika, and a pinch of salt and black pepper. Mix thoroughly to ensure all flavors are evenly distributed throughout the dip.

Transfer to Baking Dish: Pour the mixture into a medium-sized baking dish or an oven-safe skillet. Use a spatula to spread it out evenly for consistent baking.

Bake: Place the dish in the preheated oven. Bake for 20-25 minutes, or until the dip is bubbly and the cheese has melted to a deliciously golden hue on top.

Garnish & Serve: Carefully remove the dip from the oven and let it cool for a minute. If you like, sprinkle the chopped fresh cilantro over the top for a pop of color and freshness. Serve your cheesy dip warm with tortilla chips on the side for dipping.

                Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 6-8

Presentation Tips: Consider serving in a colorful bowl or dish. You might also add a lime wedge or additional cilantro on the side for a delightful visual touch!
