One of my fondest memories is of a chilly autumn night when I decided to experiment with a new recipe. Armed with a medium spaghetti squash and a few leftover ingredients from my fridge, I stumbled upon a delightful creation that would soon become a family favorite: Chicken Alfredo Stuffed Spaghetti Squash.

Chicken Alfredo Stuffed Spaghetti Squash

1 medium spaghetti squash

2 cups cooked chicken breast, shredded (rotisserie chicken works great for convenience)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning blend

Salt and pepper, to taste

1/2 cup mozzarella cheese, shredded

Fresh parsley, chopped, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds using a spoon. Brush the inner flesh of each half with olive oil, then season generously with salt and pepper. Place the squash halves cut-side down on a baking sheet. Roast in the oven for 30-40 minutes, or until the squash is tender and can be easily pierced with a fork.

      Make the Alfredo Sauce: While the squash is roasting, heat olive oil in a medium skillet over medium heat. Once the oil is hot, add the minced garlic and sauté for about 1 minute, or until it's fragrant and lightly golden. Gradually pour in the heavy cream while stirring continuously. Slowly add the grated Parmesan cheese and Italian seasoning blend, whisking until the mixture is smooth and creamy. Adjust the seasoning with salt and pepper according to your taste, then remove from heat.

        Combine Chicken and Sauce: In a large mixing bowl, combine the shredded cooked chicken with the prepared Alfredo sauce. Stir well until the chicken is evenly coated with the creamy sauce.

          Stuff the Squash: After the spaghetti squash has finished roasting, carefully flip the halves over so the cut side is facing up. Use a fork to fluff the squash flesh, creating spaghetti-like strands. Spoon the chicken Alfredo mixture evenly into each half of the squash, making sure to distribute it generously. Finally, sprinkle the shredded mozzarella cheese over the top of the stuffed squash.

            Bake Again: Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the mozzarella cheese is melted, golden, and bubbly.
