1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 carrot, shredded

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 ripe mango, diced

1 tablespoon honey

1 teaspoon lime juice

1 head of butter lettuce or iceberg lettuce, leaves carefully separated

Fresh cilantro leaves, for garnish

Chopped peanuts or cashews, for topping (optional)

Instructions
 

Prepare the Mango Glaze:

    In a small saucepan set over medium heat, combine the diced mango, honey, lime juice, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the mango is soft and the glaze has thickened slightly. Once done, remove from heat and set the glaze aside.

      Cook the Chicken Mixture:

        In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté for approximately 2-3 minutes, or until it becomes translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
