Ingredients

1 lb (450g) ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp salt

1/4 tsp black pepper

6 cups beef broth

2 cups diced tomatoes (canned or fresh)

1 medium onion, diced

2 carrots, sliced

2 stalks celery, sliced

1 cup frozen peas

1 bay leaf

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the meatballs.

Make the Meatballs: In a large mixing bowl, combine the ground beef with breadcrumbs, grated Parmesan cheese, the egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix the ingredients by hand or with a spoon until they are well combined. Roll the mixture into meatballs, aiming for a size of about 1 inch in diameter.

Bake the Meatballs: Arrange the meatballs evenly on a baking sheet that has been lined with parchment paper for easy cleanup. Place the baking sheet in the preheated oven and bake for approximately 15-20 minutes, or until the meatballs are nicely browned and cooked through.

Prepare the Soup Base: In a large pot or Dutch oven set over medium heat, pour in a splash of olive oil. Add the diced onions, sliced carrots, and sliced celery. Sauté the vegetables for about 5-7 minutes, or until they have softened and become fragrant.

Add Broth and Tomatoes: Pour the beef broth and diced tomatoes into the pot, stirring to combine. Bring the mixture to a simmer. Add the bay leaf and allow it to cook for an additional 10 minutes to deepen the flavors.

Incorporate Meatballs: Once the soup is simmering, gently add the baked meatballs into the pot. Let the soup simmer for another 10-15 minutes to meld all the delicious flavors together.

Finish with Peas: Just a few minutes before you are ready to serve, stir in the frozen peas. Allow them to heat through, which should take only a couple of minutes.

Serve: Carefully remove the bay leaf from the soup. Ladle the hearty soup into bowls, and finish with a sprinkling of fresh chopped parsley for vibrant color and flavor. Serve warm and enjoy the wholesome goodness!
