6 cups low-sodium chicken broth

2 cups rotisserie chicken, shredded into bite-sized pieces

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

2 cups egg noodles

Fresh parsley, chopped, for garnish

Heat the Olive Oil: In a large pot, heat the olive oil over medium heat. When the oil shimmers, add the finely diced onion. Sauté for about 3 minutes, stirring often, until the onion becomes translucent and fragrant.
