½ cup (50g) unsweetened cocoa powder

¼ teaspoon salt

½ cup (115g) unsalted butter, chilled and cut into cubes

⅓ cup (40g) powdered sugar

1 large egg, lightly beaten

1 cup (240ml) heavy cream

8 ounces (225g) dark chocolate (70% cacao), finely chopped

1 teaspoon pure vanilla extract

1 tablespoon brandy or coffee liqueur (optional)

Sea salt or cocoa powder for garnish

Prepare the Tart Crust: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, and salt until well combined. Add the chilled, cubed butter to the bowl. Using a pastry cutter or your fingertips, blend the mixture until it resembles coarse crumbs, with pea-sized pieces of butter still visible. Gently stir in the powdered sugar. Gradually add the beaten egg, mixing until the dough just comes together as a ball.

    Chill the Dough: Wrap the tart dough in plastic wrap and refrigerate for at least 30 minutes. This allows the butter to firm up, which will give the crust a nice texture.

      Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking.

        Roll and Form the Tart Shells: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Carefully transfer the rolled dough to a 10-inch tart pan. Press the dough gently into the edges and trim any excess with a sharp knife. Use a fork to prick the bottom of the crust all over to prevent bubbling during baking.

              Fill the Tarts: Carefully pour the ganache into the cooled tart shell. To eliminate any trapped air bubbles, gently tap the tart on the counter a couple of times.

                Chill the Tarts: Place the filled tart in the refrigerator for at least 2 hours, or until the ganache is fully set and firm.
