2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 ½ cups milk

¼ cup butter

¼ cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

½ tsp mustard powder

Salt and pepper, to taste

1 cup finely grated zucchini (about 1 small zucchini)

1 cup finely chopped cauliflower (about 1 small head)

1 cup frozen spinach, thawed and drained

½ cup breadcrumbs (optional, for topping)

2 tbsp olive oil (if using breadcrumbs)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set it aside in a large mixing bowl.
