Ingredients

For the Grits:

1 cup stone-ground grits

4 cups water (or chicken broth for enriched flavor)

1 cup sharp cheddar cheese, shredded

2 tablespoons unsalted butter

Salt and freshly ground black pepper to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 slices bacon, chopped

1 small onion, finely diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup diced tomatoes (canned or fresh)

1 teaspoon Worcestershire sauce

1 teaspoon hot sauce (optional for more heat)

1 tablespoon fresh lemon juice

2 green onions, sliced thin

Fresh parsley, chopped for garnish

Salt and freshly ground black pepper to taste

Instructions

Cook the Grits: In a large pot, bring 4 cups of water (or chicken broth for a richer flavor) to a rolling boil. Gradually whisk in the stone-ground grits along with a pinch of salt. Reduce the heat to low and allow to simmer, stirring occasionally, until the grits are creamy and have thickened, roughly 20 to 30 minutes. If the grits become too thick, add additional water or broth until you reach the desired creamy consistency.

Finish the Grits: Once the grits are fully cooked, remove them from the heat. Stir in the butter and shredded cheddar cheese until the cheese is completely melted and the mixture is smooth. Adjust seasoning with salt and black pepper to your liking. Keep the grits warm on low heat while you prepare the shrimp.

Prepare the Shrimp: In a large skillet, cook the chopped bacon over medium heat until it becomes crispy. Once cooked, use a slotted spoon to remove the bacon, and set it aside on a paper towel-lined plate to drain, leaving the drippings in the skillet.

Sauté the Vegetables: In the same skillet with the bacon drippings, add the chopped onion and diced bell pepper. Sauté for about 3-4 minutes, or until the vegetables have softened. Add the minced garlic and continue to cook for an additional minute, until fragrant.

Cook the Shrimp: Increase the heat to medium-high, then add the shrimp to the skillet. Season with salt, black pepper, Worcestershire sauce, and hot sauce (if using). Cook for approximately 2-3 minutes, or until the shrimp turn pink and opaque, stirring gently to ensure even cooking.

Add Tomatoes and Finish: Stir in the diced tomatoes and fresh lemon juice, allowing the mixture to cook for another 2-3 minutes to blend all the wonderful flavors together. If the mixture appears too dry, add a splash of water or broth to achieve a saucy consistency.

Serve: To plate, spoon a generous portion of the creamy grits onto each plate. Top it with the succulent shrimp mixture, then sprinkle with the crispy bacon and sliced green onions. For a beautiful finish, garnish with freshly chopped parsley.

Indulge in the comforting, rich flavors of this Classic Shrimp & Grits dish that beautifully captures the essence of Southern cooking!
