Cold Caprese Pasta Jars

8 oz fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup mini mozzarella balls (bocconcini)

1 cup fresh basil leaves, roughly torn

½ cup sun-dried tomatoes, finely chopped

¼ cup balsamic glaze

¼ cup extra virgin olive oil

2 cloves garlic, minced

Salt and pepper, to taste

Crushed red pepper flakes (optional, for an extra kick)

Cook the Pasta: In a large pot, bring generously salted water to a rolling boil. Add the fusilli or rotini pasta and cook according to the package instructions until al dente, usually 8-10 minutes. Once cooked, drain the pasta and rinse it under cold water until completely cooled. This step stops the cooking process and helps to avoid mushy pasta.

    Prepare the Dressing: In a small mixing bowl, whisk together the balsamic glaze and extra virgin olive oil until well combined. Then, stir in the minced garlic, and season with salt and pepper to taste. If you like a bit of heat, feel free to add a pinch of crushed red pepper flakes for an extra flavor boost.

      Mix the Ingredients: In a large mixing bowl, combine the cooled pasta with the halved cherry tomatoes, mini mozzarella balls, torn basil leaves, and chopped sun-dried tomatoes. Drizzle the prepared dressing over the pasta mixture and toss gently to ensure all ingredients are evenly coated and infused with flavor.

        Assemble the Jars: Using clean, dry mason jars or similar airtight containers, start layering your pasta salad. First, add a even layer of the pasta mixture to the bottom of each jar, followed by a layer of fresh basil leaves and a few mozzarella balls. Next, add another layer of sun-dried tomatoes and cherry tomatoes. Repeat the layering process until each jar is filled, leaving about an inch of space at the top for easy mixing later.

          Chill: Seal the mason jars tightly with their lids and refrigerate for at least 30 minutes. This chilling time allows the flavors to develop and meld beautifully. These jars can be enjoyed for up to 3 days when stored properly in the refrigerator.
