1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

8 oz (225g) cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked rice or pasta (for serving)

Sauté the Chicken: In a large skillet, heat the olive oil and butter over medium heat. Once the oil is shimmering, add the bite-sized chicken pieces. Season generously with salt and pepper. Cook for approximately 5-7 minutes, turning occasionally, until the chicken is golden brown and thoroughly cooked (with an internal temperature of 165°F/75°C). Carefully remove the chicken from the skillet and set aside on a plate.

    Cook the Vegetables: In the same skillet, add the finely chopped onion. Sauté for about 2-3 minutes, stirring occasionally, until the onion becomes translucent. Next, add the minced garlic and sliced mushrooms. Continue cooking for an additional 5-6 minutes, stirring frequently, until the mushrooms are tender and have released their juices.

      Make the Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any flavorful browned bits from the bottom of the skillet. Stir in the heavy cream, grated Parmesan cheese, dried thyme, and dried oregano.
