Ingredients

12 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

3 cloves garlic, minced

1 tsp Italian seasoning blend

Salt and freshly ground black pepper to taste

4 cups fresh baby spinach leaves

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 cup cherry tomatoes, halved

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water in case you need it later.

Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the diced chicken. Season with Italian seasoning, salt, and freshly ground black pepper. Cook, stirring occasionally, until the chicken is golden brown and cooked through, approximately 5-7 minutes. Ensure the chicken reaches an internal temperature of 165°F (75°C).

Add Garlic: Lower the heat to medium-low, then stir in the minced garlic. Sauté for an additional 1-2 minutes until the garlic becomes fragrant, being careful not to let it burn.

Incorporate Spinach: Add the fresh spinach leaves to the skillet. Cook for 2-3 minutes, stirring frequently, until the spinach has wilted and reduced in volume.

Make it Creamy: Pour the heavy cream into the skillet and bring the mixture to a gentle simmer. Gradually stir in the grated Parmesan cheese, mixing until it has fully melted into the cream, creating a rich and creamy sauce. Add the halved cherry tomatoes and gently stir to combine and warm them through.

Combine with Pasta: Carefully toss the drained penne pasta into the skillet, ensuring it is thoroughly coated with the creamy sauce. If the sauce appears too thick, add a splash of the reserved pasta water to reach your desired consistency. Taste and adjust the seasoning with additional salt and pepper, if needed.

Serve: Remove the skillet from the heat and garnish the creamy pasta with fresh basil leaves. Serve immediately, enjoying the dish hot.
