2 cups fresh spinach, chopped

1/2 cup (120ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, diced

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

1/4 cup (25g) grated Parmesan cheese

1/2 tsp red pepper flakes (optional for added heat)

Instructions
 

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the bite-sized chicken pieces, seasoning them with salt and pepper. Cook, turning occasionally, until the chicken is golden brown and cooked through, about 6-8 minutes. Once done, remove the chicken from the skillet and set it aside on a plate.

    Sauté the Aromatics: In the same skillet, add the diced onion and sauté until it becomes translucent, around 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds, or until fragrant.

      Create the Creamy Base: Pour in the chicken broth, using a wooden spoon to scrape up any flavorful brown bits from the bottom of the skillet (this is called deglazing). Allow it to simmer for about 2 minutes. Next, stir in the heavy cream and Italian seasoning, bringing the mixture to a gentle simmer.
