8 oz fettuccine or your favorite pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini or button mushrooms, sliced

4 cups fresh spinach leaves

1 cup heavy cream

1 cup vegetable broth

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust according to your heat preference)

Salt and pepper, to taste

⅓ cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Once cooked, reserve ½ cup of the pasta water, then drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet heated to medium, pour in the olive oil. Add the finely chopped onion and sauté until it becomes translucent, which should take about 3-4 minutes. Then, stir in the minced garlic and continue cooking for another minute until it becomes fragrant.

      Add Mushrooms: Raise the heat to medium-high and introduce the sliced mushrooms into the skillet. Cook the mushrooms for 5-7 minutes, stirring occasionally. They should become nicely browned and release their moisture.

        Incorporate Spinach: Add the fresh spinach to the skillet with the mushrooms. Stir and cook until the spinach wilts down, which will take around 2 minutes.
