Creamy Spinach & Ricotta Calzones

1 cup ricotta cheese

1 cup fresh spinach, finely chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound pizza dough (you can use store-bought or homemade)

1 egg (for egg wash)

Marinara sauce (for dipping)

Instructions
 

Prepare the Filling:

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Then, add the chopped spinach to the skillet and cook for approximately 2 minutes, or until it wilts. Once done, remove the skillet from heat and let the mixture cool slightly.

      Mix the Cheeses:

        In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, dried oregano, red pepper flakes (if using), salt, and black pepper. Add the cooled spinach and garlic mixture to the bowl, mixing thoroughly until all ingredients are well combined.

          Preheat the Oven:

            Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

              Roll Out the Dough:

                On a lightly floured surface, roll out the pizza dough to a thickness of about 1/4-inch, shaping it into a circle approximately 8 inches in diameter. Carefully cut the circle in half, resulting in two semi-circles.

                  Fill the Calzones:

                    Take a generous scoop of the spinach and cheese filling and place it on one half of each semi-circle, leaving approximately 1/2 inch of space from the edge to avoid overflow.

                      Seal the Calzones:

                        Fold the unused half of the dough over the filling to create a semicircular pocket. Press the edges firmly to seal, then crimp the edges with a fork for added security and a decorative touch.

                          Brush with Egg Wash:

                            In a small bowl, whisk the egg until well beaten. Brush a layer of the egg wash over the tops of each calzone to achieve a beautiful golden finish once baked.

                              Bake:

                                Transfer the filled calzones to the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until they are puffed up and turn a lovely golden brown color.

                                  Serve:

                                    Allow the calzones to cool for a few minutes before serving. Slice them in half for easy dipping, and serve warm with marinara sauce on the side for dipping pleasure.
