Creamy Taco Pasta Shells

12 large pasta shells

1 pound ground beef (or ground turkey for a lighter option)

1 packet (about 1 ounce) taco seasoning

1 can (10 oz) diced tomatoes with green chilies

1 cup sour cream

1 cup cream cheese, softened to room temperature

1 cup shredded cheddar cheese

½ cup black beans, drained and rinsed

½ cup corn (canned or frozen)

¼ cup chopped green onions

1 cup grated Monterey Jack cheese (for topping)

Fresh cilantro for garnish (optional)

Continue to brown until fully cooked through, then drain any excess fat. Sprinkle the taco seasoning over the meat and follow the package directions, adding a small amount of water if necessary. Stir to combine and allow it to simmer for about 5 minutes so the flavors meld.

      Mix in the Goodies: To the skillet with the cooked meat, add the can of diced tomatoes with green chilies, black beans, corn, sour cream, and softened cream cheese.
