Creamy Tomato Basil Soup with Grilled Cheese

1 teaspoon granulated sugar (to balance acidity)

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust for personal spice preference)

Salt and freshly ground black pepper, to taste

½ cup heavy cream (use coconut milk for a vegan alternative)

1 cup fresh basil leaves, chopped coarsely

Juice of 1 fresh lemon (about 2 tablespoons)

For the Grilled Cheese:

4 slices of rustic sourdough bread

4 slices of sharp cheddar cheese (or your cheese of choice like Gruyère or mozzarella)

2 tablespoons unsalted butter, softened

Extra fresh basil leaves, for garnish (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 5 minutes, stirring often, until the onion is soft and translucent. Add the minced garlic and sauté for an additional minute, just until fragrant but not browned.

    Add Tomatoes and Spices: Pour the crushed tomatoes and vegetable (or chicken) broth into the pot. Stir in the sugar, oregano, red pepper flakes, salt, and pepper. Increase the heat to bring the mixture to a rapid boil, then lower the heat to maintain a gentle simmer. Allow the soup to simmer for 20 minutes, stirring occasionally to meld the flavors.

      Blend the Soup: After 20 minutes, carefully remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth and creamy.
