Ingredients

1 lb ground beef or turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1/4 cup balsamic vinegar

1 tablespoon honey

8 small corn tortillas

1 cup shredded lettuce

1 cup diced ripe tomatoes

1 avocado, sliced into thin wedges

1/2 cup crumbled feta cheese or queso fresco

Fresh cilantro, roughly chopped, for garnish

Instructions

Cook the Meat: In a large skillet, pour in the olive oil and heat over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion is soft and translucent, releasing a fragrant aroma.

Add Vegetables: Incorporate the diced bell pepper into the skillet. Continue cooking, stirring occasionally, for an additional 3-4 minutes until the pepper is tender.

Add Ground Meat: Increase the heat slightly. Add the ground beef or turkey to the skillet. Cook while breaking up the meat with a wooden spoon until it is evenly browned and no longer pink, about 6-8 minutes.

Spice It Up: Season the meat mixture by stirring in the ground cumin, smoked paprika, salt, and pepper. Make sure the spices coat the meat evenly.

Prepare Balsamic Reduction: In a small mixing bowl, whisk together the balsamic vinegar and honey until combined. Pour this mixture over the meat in the skillet, stirring to incorporate. Allow the meat to simmer in the balsamic sauce for about 5 minutes, or until it thickens slightly. Adjust seasoning to taste if needed.

Crisp the Tortillas: In a separate skillet, warm the corn tortillas over medium heat for approximately 30 seconds on each side until they are pliable. For added crispiness, you can lightly fry each tortilla in a small amount of oil until they turn golden brown and crisp.

Assemble Tacos: To assemble the tacos, place a generous scoop of the balsamic-infused meat mixture into each tortilla. Top with a handful of shredded lettuce, diced tomatoes, and slices of avocado. Finally, sprinkle with crumbled feta or queso fresco.

Garnish and Serve: Garnish each taco with a sprinkle of freshly chopped cilantro for an extra burst of flavor and color. Serve the tacos immediately while the tortillas are still warm and crispy for the best experience.
