Ingredients

2 large chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

4 large flour tortillas (burrito size)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/4 cup ranch dressing or blue cheese dressing (for drizzling)

Instructions

Marinate the Chicken: Place the chicken breasts in a mixing bowl and pour the buttermilk over them. Sprinkle with salt and pepper, ensuring the chicken is well seasoned. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or for maximum flavor, let it marinate overnight.

Prepare the Breading Station: Set up your breading station by placing the flour in one bowl and combining it with the garlic powder, onion powder, smoked paprika, salt, and pepper. In a separate bowl, add the breadcrumbs. Take the marinated chicken breasts out of the buttermilk, allowing any excess liquid to drip off before moving to the next step.

Bread the Chicken: Coat each chicken breast first in the flour mixture, ensuring to cover all sides generously. Then, dip the floured chicken into the breadcrumbs, pressing gently to help them stick well for a crispy exterior.

Fry the Chicken: In a large skillet, heat about 1 inch of oil over medium-high heat until it shimmers. Carefully add the breaded chicken to the hot oil, and fry for 5-7 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F. Once cooked, transfer the chicken to a plate lined with paper towels to absorb excess oil.

Coat in Buffalo Sauce: Allow the fried chicken to rest for a minute, then slice each breast into strips. In a mixing bowl, toss the chicken strips with buffalo sauce until they are evenly coated.

Assemble the Wraps: Place a tortilla flat on a clean surface. Start by adding a generous portion of the crispy buffalo chicken to the middle of the tortilla. Top with shredded lettuce, diced tomatoes, and a sprinkle of shredded cheddar cheese.

Drizzle Dressing: Add a drizzle of ranch or blue cheese dressing over the filling, based on your flavor preference.

Wrap It Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up to secure all the delicious fillings. Repeat this process with the remaining tortillas and buffalo chicken.

Serve: For a polished presentation, slice the wraps in half diagonally and serve with extra buffalo sauce for dipping, allowing everyone to enjoy a flavorful kick!
