Ingredients

1 lb large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

4 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust according to heat preference)

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded cabbage

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: 1/2 cup sour cream or Greek yogurt for topping

Instructions

Marinate the Shrimp: In a mixing bowl, add the peeled and deveined shrimp. Incorporate the minced garlic, smoked paprika, cayenne pepper, and a pinch of salt and pepper. Mix thoroughly to ensure all the shrimp are coated in the marinade. Let the mixture sit for at least 15 minutes, allowing the shrimp to absorb all the rich flavors.

Prepare the Breading Station: Create a breading assembly line by setting up three shallow bowls. In the first bowl, add the all-purpose flour. In the second bowl, pour in the beaten eggs. In the third bowl, place the panko breadcrumbs. This will streamline the breading process.

Bread the Shrimp: Take each marinated shrimp and first dredge it in the flour, shaking off any excess. Then, dip the shrimp into the beaten eggs, ensuring it's fully coated. Lastly, roll the shrimp in the panko breadcrumbs, pressing gently to make sure they adhere well for that extra crunch.

Fry the Shrimp: Heat a large skillet over medium-high heat and pour in enough oil to cover the bottom of the pan (about 1/4 inch deep). Once the oil is shimmering, add the breaded shrimp in batches, making sure not to overcrowd the skillet. Fry for about 2-3 minutes per side or until they are golden brown and crispy. Use a slotted spoon to remove the shrimp and transfer them to a plate lined with paper towels to drain any excess oil.

Warm the Tortillas: In a separate skillet or directly over a flame, warm the tortillas for about 30 seconds on each side until they are soft and pliable. This step enhances the flavor and texture of the tacos.

Assemble the Tacos: On each warm tortilla, add a generous handful of shredded cabbage as a crisp base. Top it with 2-3 crispy garlic shrimp and a few slices of creamy avocado. If desired, drizzle a bit of sour cream or Greek yogurt on top and finish with a sprinkle of fresh cilantro for a pop of color and freshness.

Serve: Present the tacos immediately with lime wedges on the side for squeezing over the top before enjoying. This adds an extra burst of zesty flavor to your Crispy Garlic Shrimp Tacos!
