4 cups low-sodium chicken broth

1 cup carrots, diced

1 cup celery, diced

1 cup onion, chopped

3 cloves garlic, minced

1 cup frozen peas

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

2 tbsp olive oil

1/2 cup heavy cream (optional for a creamier texture)

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté for about 5 minutes, stirring occasionally, until the onions become translucent and the vegetables start to soften.

    Prepare the Chicken: Season the chicken thighs with salt and pepper. Once the vegetables are sautéed, add the chicken pieces to the skillet. Cook the chicken for about 3-4 minutes, turning occasionally, until it is lightly browned on all sides.
