Ingredients

2 large cucumbers

1 can (5 oz) of tuna in water, thoroughly drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

2 tablespoons finely chopped red onion

1/4 cup chopped celery

Salt and freshly cracked pepper to taste

Fresh dill or parsley for garnish

Optional: Cherry tomatoes, sliced for added color and flavor

Instructions

Prepare the Cucumbers: Begin by cutting the cucumbers in half lengthwise. Carefully use a small spoon to scoop out the seeds, creating a hollow space in the center of each cucumber half. Pat the insides with a paper towel to absorb any excess moisture.

Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, chopped red onion, and chopped celery. Use a fork or mixing spoon to thoroughly combine the ingredients until they are evenly blended. Season the mixture with salt and freshly cracked pepper to taste.

Fill the Cucumber Boats: Generously spoon the tuna filling into each hollowed-out cucumber half, ensuring they reach the top without overflowing.

Garnish: Lightly sprinkle fresh dill or parsley over the filled cucumber boats for an aromatic touch. For an added pop of color and flavor, place sliced cherry tomatoes on top or around the boats as a garnish.

Chill (optional): For enhanced flavor, consider refrigerating the cucumber tuna boats for 15 to 30 minutes prior to serving. This resting time allows the flavors to meld beautifully.

Serve: Present the cucumber boats on an attractive platter, making them the perfect healthy snack or appetizer for gatherings. Enjoy their refreshing crunch and delightful taste!
