2 large cucumbers, peeled and diced

1 tablespoon fresh ginger, finely grated

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (choose light or full-fat based on preference)

1 tablespoon olive oil

1 teaspoon lime juice (freshly squeezed)

Salt and freshly ground black pepper to taste

Fresh mint leaves for a delightful garnish

Optional: 1 jalapeño, seeded and finely diced (for an extra kick)

Sauté Aromatics: Begin by heating the olive oil in a large pot over medium heat. Once hot, add the chopped onion and sauté for 5-6 minutes until it turns translucent and soft. Next, stir in the minced garlic and freshly grated ginger, cooking for an additional 1-2 minutes until you can smell their delicious aroma.

    Incorporate Cucumbers: Add the diced cucumbers to the pot. Sauté for another 5 minutes, allowing the cucumbers to soften and become slightly tender while absorbing those fragrant flavors.

      Add Vegetable Broth: Pour the vegetable broth into the pot and raise the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat and let it simmer for about 15 minutes. This will give the flavors ample time to blend together beautifully.
