12 oz ziti pasta

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, grated

1 zucchini, grated

1 red bell pepper, finely diced

1 (28 oz) can crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 cups ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven temperature to 375°F (190°C) to prepare for baking.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the ziti pasta and cook according to the package directions until al dente. Once done, drain the pasta and set it aside.

      Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chopped onion and sauté for about 3-4 minutes, until it becomes translucent. Next, add the minced garlic and continue to cook for an additional minute, mixing until fragrant.

        Incorporate Hidden Veggies: Mix in the grated carrot, zucchini, and finely diced red bell pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender and the colors are vibrant.

          Prepare the Sauce: Pour the crushed tomatoes into the skillet with the vegetables. Add the dried oregano, dried basil, and season with salt and pepper. Allow the sauce to simmer for 10 minutes, letting the flavors meld beautifully.

            Mix the Cheese Filling: In a separate bowl, combine the ricotta cheese, egg, half of the shredded mozzarella, and half of the grated Parmesan cheese. Stir until everything is well combined and creamy.

              Combine Pasta and Sauce: In a large mixing bowl, blend the cooked ziti with the flavorful vegetable-tomato sauce until every piece is well coated.

                Layer the Dish: In a 9x13 inch baking dish, spread half of the ziti mixture on the bottom. Spoon dollops of the ricotta cheese mixture evenly over the pasta. Then, layer the remaining ziti mixture on top of the ricotta.

                  Top with Cheese: Finish by sprinkling the remaining mozzarella and Parmesan cheeses generously over the top of the ziti, creating a cheesy crust.

                    Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.

                      Garnish and Serve: Once baked, remove from the oven and let it sit for 5 minutes to set. If desired, garnish with fresh basil leaves for a pop of color. Serve warm and enjoy your delicious hidden veggie surprise!
