Ingredients

1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 bell pepper, sliced (choose between red, yellow, or green for color)

1 cup broccoli florets

1 cup snap peas, trimmed

2 cloves garlic, minced

1 teaspoon ginger, minced

2 green onions, chopped (for garnish)

Salt and pepper to taste

Cooked rice or noodles, for serving (optional)

Instructions

Marinate the Beef: In a medium-sized bowl, combine the thinly sliced beef sirloin with the soy sauce, oyster sauce, and cornstarch. Mix thoroughly until the beef is evenly coated. Allow the mixture to marinate for about 15 minutes, which will enhance the beef’s flavor and tenderness.

Prepare the Vegetables: While the beef is marinating, wash and slice the bell pepper into thin strips. Cut the broccoli into florets and trim the snap peas. Set all the prepared vegetables aside for later.

Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Ensure the oil is hot before moving to the next step for optimal cooking.

Stir-Fry the Beef: Once the oil is hot, add the marinated beef in a single layer, making sure not to overcrowd the pan. Stir-fry for about 4-5 minutes until the beef is nicely browned and cooked through. Use a spatula to keep the beef moving to prevent sticking. After cooking, remove the beef from the pan and set it aside on a plate.

Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Quickly add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Next, add the broccoli, bell pepper, and snap peas to the pan. Stir-fry for around 3-4 minutes until the vegetables are vibrant and tender-crisp, maintaining their brilliant colors.

Combine and Season: Return the cooked beef to the skillet with the sautéed vegetables. Gently toss all the ingredients together, allowing them to heat through for another 2 minutes. Taste the dish and adjust the seasoning with salt and pepper, ensuring the flavors are balanced.

Finish and Serve: Remove the skillet from heat. Sprinkle chopped green onions over the stir-fry for a fresh garnish. Serve the sizzling beef and vegetable combination hot over a bed of cooked rice or noodles, if desired.
