8 oz spaghetti or your preferred pasta

4 ripe heirloom tomatoes, diced into small chunks

1 cup fresh basil leaves, loosely packed and chopped

4 cloves garlic, finely minced

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly cracked black pepper, to taste

1/2 cup freshly grated Parmesan cheese, plus extra for serving

1 teaspoon balsamic vinegar (optional for depth of flavor)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water for later use, then drain the pasta and set it aside.

    Sauté Garlic: In a large skillet over medium heat, pour in the extra virgin olive oil. Once the oil is hot and shimmering, add the minced garlic. Sauté the garlic for about 30 seconds, stirring continuously, until it becomes fragrant. Be watchful to prevent burning.

      Mix Tomatoes and Basil: Add the diced heirloom tomatoes to the skillet, mixing well with the garlic. Cook for approximately 3-4 minutes, allowing the tomatoes to release their juices and soften slightly. Stir in the chopped fresh basil and sprinkle in the red pepper flakes (if using). Continue to cook for another 2 minutes until the basil is wilted and aromatic.

        Combine Pasta and Sauce: Gently add the drained pasta to the skillet with the tomato and basil mixture. Toss the pasta thoroughly to ensure it is well coated with the sauce. Gradually add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.

          Season & Serve: Taste and season the pasta with salt, freshly cracked black pepper, and balsamic vinegar (if using) to enhance the flavors. Remove the skillet from heat and fold in the freshly grated Parmesan cheese until melted and evenly distributed.
