Ingredients

2 cups fresh or frozen blueberries

1 cup unsweetened shredded coconut

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup dark chocolate chips (for drizzling)

Instructions

Prep the Blueberries:

    - If you are using fresh blueberries, rinse them gently under cold water and allow them to drain completely.

      - For frozen blueberries, let them thaw slightly at room temperature for about 10 minutes to soften them, making them easier to work with.

        Make the Yogurt Mixture:

          - In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt.

            - Whisk the ingredients together until the mixture is smooth and well blended, ensuring the sweetener is fully integrated.

              Combine Blueberries and Coconut:

                - Delicately fold the blueberries into the yogurt mixture with a spatula until they are evenly coated.

                  - Ensure that the blueberries are thoroughly enveloped by the yogurt for maximum flavor in every bite.

                    Shape the Clusters:

                      - Line a baking sheet with parchment paper to prevent sticking.

                        - Using a spoon or a cookie scoop, drop spoonfuls of the blueberry-yogurt mixture onto the parchment-lined sheet, forming small clusters, roughly the size of a golf ball.

                          Roll in Coconut:

                            - Take each cluster and either sprinkle or roll it in the shredded coconut until every piece is generously coated.

                              - This not only adds flavor but also gives a delightful texture and appearance.

                                Freeze the Clusters:

                                  - Carefully place the baking sheet in the freezer and let the clusters freeze for about 2 hours, or until they are completely firm to the touch.

                                    Optional Chocolate Drizzle:

                                      - If desired, melt the dark chocolate chips in a microwave-safe bowl, using 30-second intervals, stirring in between until the chocolate is smooth and fully melted.

                                        - Once the clusters have frozen, drizzle the melted chocolate over each one using a spoon or piping bag for an elegant touch.

                                          Serve and Enjoy:

                                            - After freezing, transfer the clusters into an airtight container for storage in the freezer.

                                              - These delicious, refreshing treats are best enjoyed straight from the freezer—perfect for a warm day or as a healthy snack!
