2 cups coconut milk (choose either canned or carton)

1 medium ripe pineapple, peeled, cored, and diced

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup shredded coconut (can be sweetened or unsweetened, based on preference)

Optional toppings: chopped nuts, fresh mint leaves, or additional pineapple chunks for garnish

Prep the Pineapple: Start by carefully cutting your pineapple into small cubes. Set aside 1/4 cup of the diced pineapple to use as a garnish later.

    Blend the Base: In a high-speed blender, combine the coconut milk, the remaining diced pineapple (excluding the reserved 1/4 cup), honey or maple syrup, vanilla extract, and salt. Blend on high until the mixture achieves a completely smooth and creamy texture.

      Incorporate the Coconut: Transfer the blended mixture into a large mixing bowl and gently fold in the shredded coconut. Ensure it’s evenly mixed. Allow the mixture to sit for about 5 minutes so the coconut has time to absorb some moisture, giving it a delightful texture.

        Fill the Cups: Using small cups or silicone molds, fill each one approximately 3/4 full with the coconut-pineapple mixture. Be sure to leave a little space at the top to accommodate the mixture as it expands while freezing.
