1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

2 cups Greek yogurt (plain or vanilla)

1 cup sweetened condensed milk

¾ cup fresh key lime juice (approximately 8-10 key limes)

Zest of 2 key limes

½ teaspoon vanilla extract

Pinch of salt

Whipped cream (for topping)

Lime slices and zest (for garnish)

Instructions
 

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are thoroughly coated and the mixture has a consistency similar to wet sand.

    Press the Crust: Line an 8x8 inch baking dish with parchment paper, ensuring there’s enough overhang on the sides for easy removal. Firmly press the graham cracker mixture into the base of the dish using the back of a measuring cup or your fingertips, aiming for an even layer. Once completed, place the dish in the freezer while you prepare the filling.

      Make the Filling: In a large mixing bowl, whisk together the Greek yogurt, sweetened condensed milk, key lime juice, lime zest, vanilla extract, and a pinch of salt. Continue whisking until the mixture is smooth and creamy, taking care to eliminate any lumps.

        Fill the Crust: Take the crust out of the freezer and pour the prepared key lime filling over the chilled crust. Use a spatula to spread the filling evenly across the surface.

          Freeze the Bars: Cover the dish with plastic wrap or aluminum foil to prevent freezer burn, then place it in the freezer for at least 4 hours, or until the mixture is completely solid.
