Frozen Kiwi Fruit Popsicles

6 ripe kiwis, peeled and chopped

1 cup freshly squeezed orange juice

1 tablespoon honey or agave syrup (adjust to your desired sweetness)

Zest of 1 lime

1 tablespoon freshly squeezed lime juice

1/4 cup coconut water (optional, for a tropical twist)

A pinch of sea salt

Prepare the Kiwis: Place the chopped kiwis into a blender or food processor. Blend on high speed until you achieve a smooth consistency. If you prefer a bit of texture, pulse the mixture until it’s slightly chunky, allowing some kiwi pieces to remain.

    Mix the Juices: In a medium bowl, combine the freshly squeezed orange juice, lime zest, lime juice, honey (or agave syrup), and coconut water if you’re using it. Whisk the mixture thoroughly until the honey is fully dissolved and the ingredients are well incorporated.

      Combine Mixtures: Pour the kiwi puree into the citrus juice mixture. Using a spatula, gently stir to combine, allowing the two mixtures to swirl together slightly. Avoid over-mixing; the goal is to maintain visible kiwi chunks for a more appealing texture.

        Prepare the Molds: Distribute the combined mixture evenly into popsicle molds, filling each mold just below the top to allow for expansion during freezing. If you don’t have popsicle molds, small paper or plastic cups work just as well!

          Insert Sticks: If using traditional popsicle molds, place the sticks into the center of each mold. For cups, cover each with a small piece of aluminum foil, then poke the sticks through the foil to hold them upright while freezing.

            Freeze: Carefully transfer the molds to the freezer and freeze for a minimum of 4-6 hours, or until the popsicles are completely solid.

              Unmold and Serve: To release the popsicles, run warm water gently over the outside of the molds for a few seconds. Carefully pull the popsicles out. Serve these delightful, refreshing treats as a snack or dessert, perfect for warm days!
