1 cup ripe mango, diced (fresh or frozen)

1 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust more or less depending on your sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: shredded coconut, diced mango, or chopped nuts for garnish

Instructions
 

Blend the Mango Mixture: In a blender, combine the diced mango, coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Blend on high speed until the mixture is smooth and creamy, with no lumps remaining.

    Add the Chia Seeds: Transfer the blended mango mixture into a large mixing bowl. Gently stir in the chia seeds until they are fully incorporated. Let the mixture sit for about 5 minutes. This resting time allows the chia seeds to absorb some of the liquid, causing the mixture to thicken.

      Prepare the Silicone Molds: Generously grease a silicone muffin tray or mold with cooking spray for easy removal of the rounds. If desired, you can also line the molds with paper liners.

        Fill the Molds: Using a spoon, carefully fill each mold with the mango-chia mixture, leaving about 1/4 inch of space at the top. Smooth the tops with the back of the spoon for a neat appearance.

          Freeze: Place the filled silicone molds in the freezer. Allow them to freeze for a minimum of 3-4 hours, or until they are completely solid.

            Serve: Once frozen, carefully pop the chia rounds out of the molds. They can be enjoyed immediately straight from the freezer, or you may let them sit for a couple of minutes to soften slightly for a more pleasant texture.

              Garnish (Optional): Before serving, feel free to enhance the rounds with a sprinkle of shredded coconut, additional diced mango, or a handful of chopped nuts for added flavor and visual appeal.
