2 cups frozen raspberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon fresh lemon juice

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup shredded unsweetened coconut

1/2 cup packed brown sugar

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted (plus additional for greasing)

1 teaspoon pure vanilla extract

Prepare the Baking Pan: Preheat your oven to 350°F (175°C). Take an 8x8 inch square baking pan and grease it thoroughly with a little butter. Line the bottom and sides with parchment paper, leaving an overhang on two sides. This will make it easier to lift the bars out later.
