Ingredients

2 cups Greek yogurt (either plain or vanilla)

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon vanilla extract

1 cup mixed berries (choose from strawberries, blueberries, raspberries, or blackberries)

1 tablespoon lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Berry Mixture:

    - In a blender, add the mixed berries along with the lemon juice and 1 tablespoon of honey or maple syrup. Blend until the mixture is smooth. However, if you prefer a bit of texture, pulse the blender a few times to retain some berry chunks. Set this berry puree aside.

      Make the Yogurt Base:

        - In a large mixing bowl, combine the Greek yogurt, remaining honey or maple syrup, vanilla extract, and a pinch of salt. Whisk it together until the mixture becomes smooth and creamy.

          Layer the Pops:

            - Start by spooning a generous layer of the yogurt mixture into each popsicle mold, filling each about one-third of the way.

              - Next, add a layer of the berry mixture into each mold, filling them to about two-thirds full.

                - Finally, top off each mold with another layer of the yogurt mixture, leaving a small gap at the top to accommodate expansion when freezing.

                  Swirl the Layers:

                    - Using a skewer or a toothpick, gently swirl the yogurt and berry mixtures together to create a beautiful marbled pattern. Be cautious not to overmix; you want to maintain visible layers of both mixtures.

                      Insert Sticks and Freeze:

                        - If your popsicle molds have a built-in stick holder, insert the popsicle sticks according to the manufacturer’s instructions. Otherwise, place the sticks into each mold.

                          - Cover the molds with their lids or tightly with plastic wrap and transfer them to the freezer. Let them freeze for at least 4-6 hours or until they are completely solid.

                            Unmold and Serve:

                              - To release the pops, run warm water over the outside of the molds for a few seconds to help loosen them. Gently tug on the sticks to pull the pops free.

                                - Optional: Garnish with fresh mint leaves for an added touch before serving. Enjoy your delightful and refreshing frozen treats!

Prep Time: 20 minutes | Total Time: 6 hours | Servings: 8 pops

Presentation Tips: For an attractive display, serve the pops on a decorative platter, and consider placing fresh berries around them for a pop of color.
