Ingredients

2 cups plain Greek yogurt

1 cup pitted cherries, fresh or frozen (if using frozen, thaw and drain well)

1/2 cup almond butter

1/4 cup honey or maple syrup

1 teaspoon almond extract

1/4 teaspoon vanilla extract

1/2 cup sliced almonds (optional for topping)

A pinch of salt

Instructions

Prepare the Cherry Mixture: In a medium mixing bowl, use a blender or fork to puree the cherries until they reach a mostly smooth consistency, leaving some small chunks for texture. If you prefer a creamier blend, blend until your desired smoothness is achieved.

Mix the Yogurt Base: In a large bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), almond extract, vanilla extract, and a pinch of salt. Whisk vigorously until all ingredients are thoroughly blended and the mixture is smooth and creamy.

Combine the Mixtures: Carefully fold the pureed cherries into the yogurt mixture. Stir gently to create lovely swirls throughout the yogurt, ensuring that the cherry flavor is well-distributed without losing the visual appeal.

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, allowing some paper to hang over the edges. This will make it easy to lift the frozen yogurt out later.

Pour and Spread: Pour the cherry yogurt mixture into the lined baking dish. Using a spatula, spread the mixture evenly across the bottom of the dish.

Add Toppings (Optional): If desired, sprinkle the sliced almonds over the top of the mixture. This not only adds a delightful crunch but enhances the flavor profile as well.

Freeze: Transfer the baking dish to the freezer and freeze for at least 4 to 6 hours, or until the bars are completely solidified.

Cut into Bars: Once fully frozen, lift the yogurt block from the pan by pulling on the overhanging parchment paper. Place it on a cutting board and slice into bars or squares with a sharp knife.

Serve & Enjoy: Enjoy the bars immediately or store them in an airtight container in the freezer for future indulgence. If the bars are too hard to bite into, let them sit at room temperature for 5 minutes to soften slightly before serving.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 8 bars

Presentation Tips: Serve the yogurt bars on a wooden cutting board or colorful platter. Drizzle with additional honey or sprinkle with extra sliced almonds before serving to enhance the visual appeal.
