Before we embark on crafting our yogurt cups, it's crucial to allow the figs to rest after slicing. This step enhances their natural sweetness by letting the juices seep out, resulting in a more flavorful base for our dessert. When figs are left to sit for about 15-20 minutes, they will release their sugars, creating a syrupy essence that will elevate the overall taste of your yogurt cups. This simple act transforms the figs from mere ingredients into a star component of the dish.

Ingredients

1 cup plain Greek yogurt

1 cup fresh figs, chopped (or substitute with dried figs if fresh aren't available)

3 tablespoons honey (plus extra for drizzling on top)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 teaspoon ground cinnamon

A pinch of salt

12 mini cupcake liners or small silicone cups for serving

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Fig Mixture: In a medium mixing bowl, combine the chopped figs, 1 tablespoon of honey, lemon juice, ground cinnamon, and a pinch of salt. Stir the mixture gently until the figs are well coated. Allow it to rest for about 10-15 minutes; this will help the figs release their natural juices and enhance their flavor.

Make the Yogurt Base: In a separate bowl, add the plain Greek yogurt, vanilla extract, and the remaining 2 tablespoons of honey. Use a whisk or spatula to mix until the yogurt is smooth and creamy, ensuring that the honey is fully incorporated.

Layer the Cups: Position your mini cupcake liners or silicone cups on a baking sheet for support and stability. Begin by spooning about a tablespoon of the yogurt mixture into each cup. Next, add a spoonful of the fig mixture on top of the yogurt. Layer again, repeating the process until the cups are filled, ensuring to finish with a generous dollop of yogurt on top.

Freeze the Cups: Carefully place the baking sheet with the filled cups into the freezer. Allow them to freeze for at least 4 hours, or until they become solid and firm to the touch.

Serve: Once frozen, take the cups out of the freezer. If you used cupcake liners, you can easily peel them away from the frozen yogurt cups. Drizzle a little extra honey over the top of each cup and, if desired, garnish with fresh mint leaves for a burst of color and flavor.

Enjoy: Serve these delightful frozen treats immediately for a refreshing dessert, or store the cups in an airtight container in the freezer for up to 2 weeks for later enjoyment.
