2 ripe mangos, peeled and diced

1 cup coconut yogurt (feel free to substitute with regular yogurt if preferred)

1 cup full-fat canned coconut milk

2 tablespoons honey or maple syrup (increase or decrease based on sweetness preference)

1 teaspoon pure vanilla extract

½ cup unsweetened shredded coconut

¼ teaspoon sea salt

1 tablespoon fresh lime juice (to add a zesty flavor)

Instructions
 

Prepare the Mango Puree: Place the diced mangoes into a blender and blend until smooth. For added texture, leave some small chunks of mango. Set the puree aside.

    Mix the Yogurt Base: In a large mixing bowl, combine the coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and sea salt. Use a whisk to blend the ingredients together until the mixture is smooth and well-combined.

      Layer the Mixture: Take your silicone molds or ice cube trays and pour a thin layer of the yogurt mixture into the bottom of each mold. Tap the molds gently on the counter to release any trapped air bubbles.

        Add Mango Puree: Spoon a small amount of the mango puree on top of the yogurt layer to create the first layer of the yogurt bomb.

          Repeat Layers: Continue layering by alternating the yogurt mixture and mango puree until you reach the top of the molds. Ensure the final layer is the yogurt mixture to create a beautiful presentation.

            Top with Shredded Coconut: Sprinkle the shredded coconut generously over the final yogurt layer. Press it down gently to ensure it sticks to the mixture.

              Freeze: Cover your molds with plastic wrap or lids and place them in the freezer. Allow them to freeze for at least 4 hours; overnight freezing is recommended for a firmer texture.

                Unmold and Serve: After the yogurt bombs are frozen solid, gently twist or pull them out of the molds. If they’re sticking, run the outside of the molds under warm water to assist in removal.
