Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon pure vanilla extract

1/2 cup unsalted pistachios, shelled and coarsely chopped

1 cup frozen raspberries (or your preferred berries)

2 tablespoons freshly squeezed lemon juice

1 tablespoon agave syrup or honey (optional, for extra sweetness)

Instructions

Prepare the Yogurt Base: In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk the ingredients together until the mixture is smooth and uniformly blended.

Make the Berry Swirl: In a separate small bowl, add the frozen raspberries along with the lemon juice. If you're using agave syrup, add that as well. Mash the raspberries with a fork or a small blender until they break down into a chunky sauce, but still retain some small pieces.

Incorporate the Pistachios: Gently fold the chopped pistachios into the yogurt mixture, ensuring an even distribution of the delightful crunch throughout.

Layer the Mixtures: Prepare a 9x5 inch loaf pan by lining it with parchment paper, allowing some overhang for easy removal later. Pour half of the yogurt mixture into the bottom of the pan, spreading it evenly across the surface. Take half of the berry mixture and dollop it on top of the yogurt layer. Using a knife or skewer, gently swirl the mixtures together without completely blending them.

Add the Remaining Layers: Carefully pour the rest of the yogurt mixture over the first layer. Top this with the remaining berry sauce, again creating gentle swirls to achieve a beautiful marbled effect.

Freeze to Set: Cover the loaf pan tightly with plastic wrap and place it in the freezer. Allow it to freeze for a minimum of 4 hours or until the mixture is completely solid.

Slice and Serve: Once frozen, lift the bars out of the pan using the parchment paper. Let them sit at room temperature for a few minutes to soften slightly for easier slicing. Use a warm knife to cut the dessert into bars for clean edges.

Garnish (optional): For an extra touch of indulgence, drizzle the sliced bars with additional honey and sprinkle with more chopped pistachios just before serving.

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes | Servings: 8 bars

Presentation Tips: Serve the bars on a decorative platter and add a few fresh berries or a sprig of mint for a pop of color.
