Frozen Yogurt Toast Crunch Cookie Bars

Ingredients
  

1 cup plain Greek yogurt

1/2 cup honey or maple syrup

2 teaspoons vanilla extract

1 1/2 cups rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup Toast Crunch cereal

1/2 cup mini chocolate chips (optional)

Fresh fruit for topping (such as strawberries, bananas, or blueberries)

Instructions
 

Prepare the Yogurt Mixture: In a large mixing bowl, add the plain Greek yogurt, honey or maple syrup, and vanilla extract. Using a whisk, blend all the ingredients together until the mixture is smooth and creamy.

    Mix the Dry Ingredients: In a separate bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and ground cinnamon. Stir until the mixture is well combined and there are no clumps.

      Combine Both Mixtures: Gradually fold the dry ingredient mixture into the yogurt mixture using a rubber spatula. Mix until just combined, being careful not to overmix to maintain a light texture. Gently fold in the Toast Crunch cereal and mini chocolate chips, ensuring they are evenly distributed throughout the batter.

        Prepare the Baking Pan: Take an 8-inch square baking pan and line it with parchment paper, leaving an overhang on the sides. This will make removing the bars easier later on.

          Spread the Mixture: Pour the combined mixture into the prepared pan. Using a spatula, spread it evenly across the surface and press down gently to compact the mixture, ensuring it holds together when frozen.

            Freeze the Bars: Cover the pan with plastic wrap and place it in the freezer. Allow the mixture to freeze for a minimum of 4 hours or until it is completely firm.

              Slice and Serve: Once frozen, carefully lift the mixture out of the pan using the parchment paper overhang. Transfer it to a cutting board and slice into bars of your preferred size.
