6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a spicy kick)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C), ensuring it reaches the right temperature for roasting.

    Prepare the Potatoes: Rinse the baby potatoes under cold water to remove any residual dirt. Use a clean kitchen towel to thoroughly dry them – this helps achieve a crispy exterior while roasting.

      Melt the Butter: In a small saucepan, gently melt the unsalted butter over low heat. Once the butter has melted, take it off the heat and stir in the minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and red pepper flakes (if desired) until the mixture is well combined and fragrant.
